The process has a name: nixtamalization. It comes straight from Nahuatl - nextli, "lime ash," plus tamalli, "corn dough." And the oldest evidence for it isn't recent: it turns up on Guatemala's Pacific coast, with equipment dated to roughly 1500 BC - over three thousand years ago.

What the lime actually does

Alkaline lime does what your stomach can't. It frees the niacin that's chemically bound up inside the kernel, and it makes the amino acids available. Plain corn, treated this way, stops being empty starch and becomes real, more complete food. That's not folklore - it's the verified science behind why civilizations could live on maize.

Then the step got left behind

When corn spread to Europe and the US South, the plant traveled but the chemistry stayed home. People grew it, ground it, and ate it plain - no lime, no soak. And they started getting sick.

The disease was pellagra

Niacin deficiency has a name: pellagra. In the American South alone, there were over three million cases and more than a hundred thousand deaths between 1906 and 1940 - because a single processing step that Mesoamericans had mastered was missing. Not the whole world, not a vague global number: the well-documented US South figure, and it's staggering enough on its own.

So here's the honest correction. The corn wasn't cursed. It wasn't "poor-man's poison." The knowledge was missing. Mesoamerica had the science all along. Mexican by name. American by history.
